My mum tells me- quite often- that I make a lot of cakes. She is right: I do make a lot of cakes. I truth is that I enjoy making them and I love taking a break from the traditional breakfast food, such as toast, cereals, yogurt… And so here I am with a new recipe, a new cake, simple and delicious, made with kiwis (I LOVE KIWIS!). A cake that combines softness and crunchiness at the same time, because on the one hand you feel the kiwi’s small grains and the almonds, on the other hand you taste both the sweetness and a bit of acidity side of the kiwis. On top of that, besides being delicious, kiwis are a natural source of vitamins, mineral salts, potassium, folic acid and fibers. So, I know that this is still a cake, but definitely better than an industrial snack, right?

I found this recipe here , I just made some small changes.

Ingredients for a round cake pan of 24 cm

3 eggs at room temperature
3 big kiwis+ 1 for decoration
90 gr. of sugar
100 gr. of all-purpose flour
1 full tsp. of baking powder
100 gr of almond powder
100 gr of butter, melted
The seeds of half a vanilla pod
2 tbsp. of almond flakes

Steps

Preheat the oven to 180 and line a spring form cake pan with parchment paper;
Peel 3 kiwis, cut into cubes and mix them into puree with 20 gr. of sugar and the vanilla seeds;
In a bowl, whisk the sugar you have left and the eggs;
Stir in the flour, almond powder and yeast, mix and add the softened butter;
Stir in the kiwi puree and mix well until the batter has a very homogeneous texture;
Pour the dough into the cake pan and bake for about 30 minutes or until the cake surface is golden brown and a toothpick inserted in the center of the cake comes out clean;
Let cool completely then decorate with almond flakes, icing sugar and some slices of kiwi, then serve.

Ingrédients pour un moule de 24 cm

3 œufs à temperature pièce
3 grands kiwis + 1 pour décorer
90 gr. de sucre
100 gr. de farine
1 bon c. à thé de poudre à pâte
100 gr. de poudre d’amande
100 gr. de beurre fondu
Les graines d’une demi gousse de vanille
2 c. à soupe d’amandes tranchées

Préchauffez le four à 180 et tapissez un moule à charnière avec du papier parchemin et réserver;
Epluchez les 3 kiwis, coupez-les en cubes puis mixez-les en purée avec 20 gr de sucre et les graines de vanille;
Dans un bol, fouettez énergiquement le sucre qui reste et les œufs;
Incorporez la farine, la poudre d’amandes et la levure, mélangez puis ajoutez le beurre;
Incorporez la purée de kiwis, mélangez bien la pâte jusqu’à ce que sa texture soit homogène;
Versez la pâte dans le moule et enfournez pendant 30 minutes jusqu’à ce que la surface du gâteau soit dorée et qu’un cure-dents inséré au centre du gâteau en ressorte propre;
Laissez complètement refroidir, puis décorez avec du sucre à glace, les amandes et les tranches du kiwi. Servez-le.

Ingredienti per uno stampo da 24 cm 

3 uova a temperatura ambiente
3 kiwi grandi + 1 per decorare
90 gr. di zucchero
100 gr. di farina 00
1 cucchiaino abbondante di lievito per dolci
100 gr. di farina di mandorle
100 gr di burro fuso
I semi di mezzo baccello di vaniglia
2 cucchiai di mandorle affettate

Procedimento

Preriscaldate il forno a 180° e rivestite uno stampo a cerniera con carta forno, mettete da parte;
Sbucciate 4 kiwi, tagliarli a dadini e riduceteli in purea con 20 gr di zucchero presi dal totale e semi di vaniglia;
In una ciotola montate energicamente il resto dello zucchero e le uova;
Incorporate la farina, il lievito e la farina di mandorle, mescolate bene e poi aggiungete il burro;
Incorporate la purea di kiwi, mescolate bene fino a renderla omogenea;
Versate l’impasto nella teglia e cuocete per circa 30 minuti, o fino a quando la superficie della torta non sarà bella dorata e uno stuzzicadenti inserito al centro della torta non uscirà pulito;
Lasciate raffreddare completamente e poi decorate con zucchero a velo, le mandorle e le fette di kiwi. Servite.
