Peach and rosemary popsicles

  • 250 ml. of water • 150 gr. of cane sugar • 4 sprigs of rosemary • the zest of a lemon + 1 tablespoon of its juice • 5 ripe peaches
  1. In a saucepan, bring the water to boil with sugar, 3 sprigs of rosemary and the lemon zest for 10-12 minutes;
  2. Turn off the heat, add lemon juice and let the syrup cool completely down;
  3. Peel the peaches, remove the cores and cut them into slices;
  4. Strain the rosemary syrup, add in the peaches, add 1 cup of water (or more if necessary) and using a mixer reduce the fruit pulp until smooth;
  5. Add the rosemary spring that you have left;
  6. Fill the popsicle mold (plastic or glass / aluminum if you don’t have the specific mold), put in the freezer and let it freeze for at least 5-6 hours. If you do not use the popsicle mold, be sure to insert the wooden sticks after 2 hours.
