Raspberry and pistachios “financiers”

  • 250 gr. of fresh raspberries • 180 gr. of butter • 3 egg whites • 150 gr. of icing sugar • 70 gr. of pistachio powder • 60 gr. of flour • a pinch of salt
  1. Preheat oven to 160°, grease the financiers mold with butter *;
  2. Melt the butter in a saucepan over a low heat until butter turns into a "nutty" color (be careful to not burn it);
  3. Turn off the heat and set the butter aside;
  4. Whisk the egg whites for 1 minute, add pistachio powder, flour, icing sugar and melted butter and mix well;
  5. Pour carefully the mixture into the molds (repeat with a second batch if necessary) and cook for about 20 minutes;
  6. Let cool down before removing the financiers from the mold, sprinkle with icing sugar before serving.
  7. * You can use a regular cake mold with not too high edges. In this case you should increase the cooking time up to 25 minutes.
