Spicy pumpkin soft cookies

  • 250 gr. of flour
  • 180 gr. of butter, softened
  • 1 egg
  • 125 gr. of cane sugar
  • 200 gr. of pumpkin meat (steamed or baked)
  • about 10 gr. of baking powder
  • ½ teaspoon of cinnamon
  • ¼ teaspoon of nutmeg
  • ¼ teaspoon of grated ginger
  • 1 pinch of salt
  1. Preheat oven to 180 °, line a baking tray with parchment paper;
  2. In a bowl, mix flour, baking powder and the spices;
  3. In another bowl, whisk butter and sugar for 30 seconds, add in the pumpkin meat, then the egg and mix well;
  4. Add the flour and spice mix and stir again;
  5. Make the cookies directly on the tray pouring about 2 teaspoons of the mixture;
  6. Bake for about 12-15 minutes, once they have cooled down, dust with icing sugar.
