"Pasta e patate"

  • 320 gr. of pasta (even in different shapes)
  • 600 gr. of peeled potatoes
  • 1 tablespoon tomato paste
  • 70 gr. pancetta
  • 1 onion (or shallots) 
  • 1 piece of celery
  • 1 piece of carrot
  • ⅘ tablespoons of olive oil 
  • Salt, pepper
  • The crust of piece of parmesan
  • Grated parmesan
  1. Finely chop onion, carrot and celery;
  2. In a saucepan, stir-fry the onion mix with the olive oil, then add the pancetta cut in cubes and cook for about 2 minutes, stirring often;
  3. Add the tomato paste and the potatoes, and cook for 2-3 minutes, stirring often to avoid the potatoes sticking to the bottom of the saucepan
  4. Add the water, enough to cook the pasta, the pasta and the parmesan crust;
  5. Add salt and pepper and cook until the potatoes and pasta are well cooked*;
  6. Turn off the heat, add grated Parmesan and if you like a stronger flavor add more pepper.
  7. *In this preparation, pasta will not be cooked "al dente" but much longer.
