Quinoa and broccoli “hamburgers”

Ingredients
  • 280/300 gr. of broccoli (without the harder stems), washed and chopped
  • 200 gr. of white quinoa
  • 1 medium potato, boiled and mashed with a fork
  • 1 garlic clove
  • 1 slice of bread
  • 2 tablespoons of corn flour
  • 3 tablespoons of olive oil + for baking
  • Salt and pepper
  • For the sauce: 3 tablespoons of Greek yogurt + 1 tablespoon of mustard
Instructions
  1. Rinse well the quinoa in cold water;
  2. Put some water and quinoa in a pot (2 parts water and 1 quinoa), cover and bring to boil. Cook over low heat for about 15 minutes;
  3. Meanwhile, sauté the garlic in a pan with olive oil, add broccolis, salt and pepper and cook, covered, until the vegetables are very tender, almost defeated;
  4. Remove the garlic clove and mush the broccolis with a fork;
  5. Drain the quinoa and place it in a bowl, add the mashed potato and the mashed broccolis, salt to taste and mix well with your hands;
  6. Using a mixer, reduce the bread into crumbs and mix with corn flour;
  7. Preheat oven to 180° C and line a baking tray with parchment paper;
  8. Wet your hands and shape the burgers (the size of your palm) and coat them with the mixture of bread and corn flour;
  9. Put the burgers on the tray, drizzle with olive oil on top and bake for about 15 minutes;
  10. Serve the quinoa and broccoli burgers warm with sauce.
