Vegan banana bread with chocolate chips and lemon

  • 150 gr. unbleached flour
  • 130 gr. of Kamut flour
  • 3 tablespoons of brown sugar
  • 2 very ripe bananas
  • 80 ml. of vegetable oil (avocado for me)
  • 250 ml of coconut milk (or almonds)
  • 100 gr. of chocolate chips
  • Zest of 2 lemons
  • 10 gr. of baking powder
  • 1 pinch of salt
  1. Preheat oven to 180°, grease a cake pan with oil, sprinkle with flour and set it aside;
  2. In a bowl smash the bananas and add the sugar;
  3. In a bigger bowl sift flour with baking powder and add the lemon zest;
  4. Add in the banana mix and pour the milk a little at a time, stirring;
  5. Add the vegetable oil a little at a time, stirring;
  6. Add the chocolate chips and a pinch of salt, mix well and pour the batter into the mold;
  7. Bake for about 40 minutes; check for doneness with a toothpick;
  8. Let the banana cake cool down completely before unmolding it.
