  • 1 Palmer mango
  • 100 gr. of cane sugar
  • 50 gr. of apple vinegar
  • Juice and zest of 1 lemon
  • 2 teaspoons of fresh ginger, grated
  • 4-5 cloves
  • ½ teaspoon of mustard seed
  • ½ cinnamon stick
  • 1 pinch of chili
  1. Peel the mango and cut into small pieces;
  2. Put the mango pieces and all other ingredients in a saucepan and cook over a low heat for about 45 minutes, stirring often with a wood spoon;
  3. Turn the heat off and flip the mixture into a glass jar, let it cool completely before closing the lid.
