Coconut, orange and olive oil “squares”

  • 2 eggs
  • 10 tablespoons of sugar
  • 10 tablespoons of flour
  • 4 tablespoons of grated coconut
  • 8 tablespoons of milk
  • 6 tablespoons of coconut oil
  • zest and juice of an orange
  • 10 gr. of baking powder
  • 1 pinch salt
  1. Preheat oven to 180°, grease a rectangular baking dish with butter and sprinkle with bread crumbs;
  2. Mix the eggs with sugar until you obtain a pail yellow mix, add the flour sifted with grated coconut and yeast;
  3. Add coconut oil, milk, zest and juice of the orange and a pinch of salt, mix well;
  4. Pour the mixture into the buttered dish and bake for about 25 minutes;
  5. Let cool down, then untold, cut in squares and sprinkle with icing sugar.
